Tortilla Soup
Tortilla Soup is an moderately easy dinner. Made with 4 to 6 boneless, skinless chicken breasts, cooked and cubed, 1 onion, chopped, 3 cloves garlic, minced, 1 (4 oz.) can green chilies, chopped and 1 can ro-tel tomatoes, diced, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Saute onion, garlic, green chilies and Ro-Tel tomatoes in 4 tablespoons butter in a large pot.
Add tomatoes, broth and corn. Bring to a boil and simmer for 30 minutes.
Add cubed chicken and simmer 15 to 30 minutes longer.
(The longer this simmers, the better the flavor.)
Serve over tortilla chips and top with shredded cheese.
