Taco Salad
Taco Salad is an moderately easy dinner. Made with 1 can fat free refried beans, 1 c. corn (frozen works great), 2 tsp. dry taco seasoning mix (40 % less sodium), or several dashes of texas pete to taste, 2 yellow corn taco shells and 2 tbsp. breakstone reduced fat sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat beans, add a little water and stir until heated.
Add corn and seasoning mix or Texas Pete.
Heat taco shells in 300Β° oven for a few minutes.
To serve two large portions - crumble two shells in bowl and top with 1/2 beans and corn.
Add sour cream, lettuce, onions, tomato and salsa to taste.
Only 5 points per person.
