Tabooley(Arabic Salad) is an moderately easy dinner. Made with 2 to 3 bunches green onions, 3 bunches parsley leaves, 1 bunch fresh mint or 3 tsp. dried mint, 3 to 4 large tomatoes and 1/2 c. cracked wheat, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cover cracked wheat with water and let soak while preparing vegetables.
Chop all vegetables fine.
Use only the leaves of the parsley and fresh mint.
Drain and squeeze the water out of the cracked wheat and add to the veggies.
Add the remaining ingredients, adjusting seasoning to taste.
Serve with fresh pita bread.
