Sweet Potato Muffins
Sweet Potato Muffins is an moderately easy dinner. Made with 1/2 c. butter or margarine, softened, 1/4 tsp. salt, 1/4 tsp. ground nutmeg, 1 tsp. ground cinnamon and 1/4 to 1/3 c. milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Soak raisins in hot water.
Set aside.
Cream butter; gradually add sugar.
Beat at medium speed with electric mixer. Add eggs, one at a time, beating well after each.
Stir in sweet potatoes and milk.
Combine flour, baking powder, salt, cinnamon and nutmeg; add to creamed mixture, stirring just until moistened. Drain raisins; stir in raisins and pecans.
Spoon into greased muffin pans, filling 2/3 full.
