Sweet Potato Biscuits
Sweet Potato Biscuits is an moderately easy dinner. Made with 1 (8 oz.) can sweet potatoes or 1 c. mashed sweet potatoes, 1 stick (1/2 c.) butter at room temperature, 2 c. all-purpose flour, 1 tbsp. baking powder and 3/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Peel potatoes, cut in 1/2-inch pieces.
Cook for 10 minutes or until very tender.
Drain well, put into a large bowl and mash until smooth.
Stir in butter, sugar, a little at a time.
Heat oven to 425Β°.
Have a cookie sheet ready.
Pour flour, baking powder, salt, baking soda and cinnamon in a medium size bowl. Stir flour mixture into potato mixture in 3 additions, alternately with buttermilk, just until blended.
Form into a ball and sprinkle some flour on top.
Roll dough to 1/2 to 3/4-inch thickness.
Bake 15 to 20 minutes, until golden.
Spread butter on top while hot.
