Sugar-Free Frosty Lemon Pie
Sugar-Free Frosty Lemon Pie is an moderately easy dinner. Made with 9-inch pie crust, brushed with egg whites, baked and cooled, 1 2/3 c. sugar-free lemon yogurt, 2 packets equal, 1 small pkg. sugar-free lemon gelatin (4 serving size) and 3/4 c. boiling water, this recipe delivers authentic, satisfying flavors. Mix Equal into yogurt and set aside.
Stir boiling water into gelatin powder until dissolved.
Stir until melted, then stir in lemon concentrate.
Finally, using a wire whip, whisk yogurt into gelatin mixture until smooth.
Pour into pie crust.
Refrigerate 2 1/2 to 3 hours (or place in freezer for no more than 30 minutes and then into refrigerator until ready).
Garnish each pie slice with a mint sprig or orange slice.
