Made with 1/4 lb. bacon, 1 c. each: chopped onion and thin sliced carrots, 1 lb. dried green split peas, rinsed and picked over, 6 c. water and salt to taste (about 2 tsp.), this recipe delivers authentic, satisfying flavors. Fry bacon until crisp.

Set aside.

Saute onions and carrots in drippings for about 10 minutes, stirring often.

Stir peas into water; add carrots and onions and bring to a boil.

Cover and simmer for one hour or longer, until tender.

Add salt and taste. Garnish with reserved bacon.

Freezes well.

Makes about 2 quarts.
