Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 1/4 lb. bacon, 1 c. each: chopped onion and thin sliced carrots, 1 lb. dried green split peas, rinsed and picked over, 6 c. water and salt to taste (about 2 tsp.), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Fry bacon until crisp.
Set aside.
Saute onions and carrots in drippings for about 10 minutes, stirring often.
Stir peas into water; add carrots and onions and bring to a boil.
Cover and simmer for one hour or longer, until tender.
Add salt and taste. Garnish with reserved bacon.
Freezes well.
Makes about 2 quarts.
