Spicy Low-Fat Jambalaya
Spicy Low-Fat Jambalaya is an impressive healthy dish you can prepare in about 1 hour 56 minutes. Made with turkey ham or ham, cut into cubes (approximately 4 oz.), c. onion, chopped, c. bell pepper, chopped, garlic, chopped and bay leaves, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In nonstick 12-inch skillet, heat oil on medium; saute onion and bell pepper for 1 minute.
Add chicken broth, tomato sauce, water, ham, garlic, parsley, thyme and cayenne.
Stir.
Bring to a boil.
Add rice.
Stir.
Add bay leaves on top.
Reduce heat to a simmer, cover and cook for 20 minutes.
Uncover; let sit 5 minutes.
Fluff with a fork and serve.
Makes 2 large servings (352 calories and 4 1/2 grams fat per serving).
