Şöbiyet
Sobiyet is a Turkish pastry of crisp yufka layers filled with semolina cream and pistachios, baked golden and soaked lightly with syrup so each triangle stays flaky.

Cook semolina, milk, and sugar into a thick cream and cool it until spoonable.
