Sauerkraut Salad
Sauerkraut Salad is an moderately easy dinner. Made with 2 lb. sauerkraut, 1 c. diced celery, 1/2 c. diced green pepper, 1 small onion, diced and 1 small jar pimento, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Make a syrup of the vinegar, sugar and oil.
Cook until sugar is dissolved.
Drain sauerkraut; rinse in water and drain well. Add celery, peppers, onion and pimento to sauerkraut.
Pour syrup over all.
Mix together and refrigerate a day or two before serving.
Keep covered.
Makes 6 to 8 servings.
It is a sweet-sour taste and very tasty.
