Sally's Lentil Soup
Sally'S Lentil Soup is an moderately easy dinner. Made with 1 1/2 c. lentils, 1 (28 oz.) can plump tomatoes, 3 qt. water, 1/2 c. olive oil and 1 medium onion, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place lentils in bowl.
Add water; soak overnight.
Drain and discard soaking water.
Wash lentils well in water.
Place lentils in soup pot; cover with 3 quarts of water and bring to a boil. Add onion, celery, carrots, tomatoes, olive oil and spinach.
Salt and pepper to taste.
Add grated cheese.
