Roasted Peppers(Peperoni Arrostiti)
Roasted Peppers(Peperoni Arrostiti) is an easy dinner. Made with 6 to 8 large red and yellow peppers, 1/2 c. olive oil, 4 cloves garlic, finely chopped, 3 tbsp. chopped fresh parsley and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Roast peppers under broiler or on outside grill, until skin blisters and chars.
Peppers in paper bag and let sit for 5 minutes.
Peel peppers and remove seeds.
Peel under running water, if necessary.
Cut peppers in long thin strips. Arrange in platter, overlapping peppers.
Sprinkle with olive oil, garlic, parsley, salt and pepper.
Serve at room temperature with fresh Italian bread, desired.

Makes 8 to 10 servings.
