Roast Chicken Italiana
Roast Chicken Italiana is an moderately easy dinner. Made with 1 (4 to 4 1/2 lb.) roasting chicken, 1 1/2 tsp. salt, 1 tsp. pepper, 1/2 tsp. onion powder and 1 1/2 c. parsley, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Sprinkle outside and cavity of chicken with salt, pepper and onion powder.
Place on rack in roasting pan.
In blender, combine parsley, basil leaves, poultry seasoning, salt, pepper, garlic powder and tomato juice.
Run at medium speed 1 minute or until mixture is smooth.
Brush chicken with tomato-herb mixture.
Roast chicken at 375Β° (moderate oven) 2 hours and 20 minutes or until chicken is cooked throughout (drumstick moves easily).
Serve garnished with parsley.
Remove skin.
