Rice With Green Chilies And Sour Cream is an moderately easy dinner. Made with 3/4 c. rice (1 1/3 c. precooked), 2 c. commercial sour cream, salt, 1/2 lb. jack cheese (a mild white cheese) and 1 (6 oz.) can peeled green chili peppers, this recipe delivers authentic, satisfying flavors. Cook rice according to directions on package (quick-cooking rice may be used).
Combine cooked rice with sour cream and season to taste with salt.
Arrange half the mixture in the bottom of a greased casserole.
Cut the 1/2 pound of Jack cheese into domino-sized pieces and wrap them in strips of green chili peppers.
Place these on top of the rice in the casserole, add the remaining rice mixture, and dot with butter.
Cover with the grated Jack cheese.
Bake in a moderate oven (350Β°) for 30 minutes.
Serve hot.
