Rhubarb Custard Pie
Rhubarb Custard Pie is an moderately easy dinner. Made with 2 c. cut rhubarb, 3 tbsp. water, 1 c. sugar, 2 eggs (separated) and 1 heaping tbsp. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix sugar and flour.
Add water and egg yolks.
Mix with rhubarb and put into unbaked pie shell.
Top with butter and bake to custard consistency.
For first 10 minutes bake pie at 425°, then reduce heat to 350° and bake until done.
Cover with meringue made from 2 egg whites and brown.
