Pumpkin Roll
Pumpkin Roll is an impressive dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Beat at high for 5 minutes the eggs.
Gradually add sugar, pumpkin and lemon juice.
Stir in flour, baking powder, cinnamon, ginger, salt and nutmeg.
Spread onto a large cookie sheet. Sprinkle with 1 cup chopped nuts.
Bake at 350Β° for 15 minutes. (Turn into towel while hot.)
Sprinkle towel with powdered sugar and roll while hot.
Let cool.
Unroll and fill with filling.
