Potato Fajitas
Potato Fajitas is an moderately easy dinner. Made with 12 to 16 oz. boneless, skinless chicken, fajita marinade, 2 tbsp. vegetable oil, 4 (8 oz.) russet potatoes, baked and 1/2 c. sliced onion, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Slice chicken into strips.
Marinate in Fajita Marinade about 1 hour.
Saute chicken and onion in oil until onions are tender. Add peppers and cook about 3 minutes or until chicken is thoroughly cooked.
Slit top of potato, squeeze to fluff, spoon mixture over.
Serve with cheese and sour cream.
