Potato Dumplings
Potato Dumplings is an moderately easy dinner. Made with 2 c. boiled potatoes, 1 tsp. salt, 1 tbsp. chopped parsley, 1/2 c. all-purpose flour and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift flour and baking powder.
In a mixing bowl, combine all other ingredients and add flour mixture, mixing real well.
Drop by tablespoons on top of beef stew, chicken soup or sauerkraut, about 1/2 hour before serving.
Cover tightly and steam for 25 minutes.
Serve dumplings on or around the stew or whatever. Makes 5 servings.
