Potato Broccoli Cheese Soup
Potato Broccoli Cheese Soup is an moderately easy dinner. Peel potatoes and cut into 3/4-inch cubes; set aside.
Melt butter in a large saucepan; add onion and saute for 5 minutes. Add potatoes and water/broth.
Cover; bring to boil.
Reduce heat to medium and cook just until potatoes are tender, about 15 minutes.
Remove 1 cup of the potato cubes with a slotted spoon and set aside.
Pour contents of saucepan into a blender and mix until smooth, then return mixture to the saucepan.
