Phoney Abalone is an easy dinner. Made with 4 small chicken breasts (boneless and skinless), 1 (8 oz.) bottle clam juice, salt and pepper to taste, 2 c. crackers, crumbled (ritz or saltines) and butter and oil for frying, this recipe delivers authentic, satisfying flavors. Place chicken breasts between layers of wax paper and pound flat.
Marinate in clam juice 3 to 6 hours, turning often.
