Oatmeal Waffles is an moderately easy dinner. Made with 1 1/2 c. all-purpose flour, 1 c. quick cooking rolled oats, 1 tbsp. baking powder, 1/4 tsp. salt (optional) and 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large bowl, stir together flour, oats, baking powder, cinnamon and salt; set aside.

In small bowl, stir together eggs, milk, butter and brown sugar.

Add to flour mixture; stir until blended.

Pour batter onto grids of preheated lightly greased waffle iron (amount will vary according to size of waffle iron). Sprinkle a few chopped pecans on top of batter; close lid quickly; do not open during baking.

Remove cooked waffles and serve with maple syrup; fresh fruit and yogurt, etc.

Yields 12 waffles (4-inch squares).
