Oatmeal Muffins
Oatmeal Muffins is an moderately easy dinner. Made with 1 c. oatmeal, 1 c. buttermilk, 1 egg, 1/2 c. brown sugar and 1/2 c. melted shortening, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Soak oatmeal in buttermilk for 30 minutes.
Add egg and beat well.
Add sugar and mix.
Add cooled shortening.
Add flour sifted with baking powder, salt and soda.
Fill greased muffin pans two-thirds full.
Bake at 400Β° for 15 to 20 minutes.
Makes 1 dozen.
