Mushroom and Cheddar Soup

Melt butter in saucepan.
Add onion and garlic.
Cook 2 to 3 minutes. Add mushrooms. Cook over high heat until browned and liquid has evaporated. Sprinkle flour over mushrooms.
Cook until flour is lightly browned.
Add stock and milk.
Bring to a boil. Add salt and pepper. Reduce heat, cover and simmer 15 minutes. PurΓ©e soup. Return to pot.
Add Cheddar. Cook gently until cheese has just melted.
Serve, sprinkled with parsley and cheese.
