Mexican Enchiladas
Mexican Enchiladas is an moderately easy Mexican dinner you can prepare in just 36 minutes. Made with tortillas, c. salad oil, -10 oz. can enchilada sauce, cheese sauce and tomatoes, peeled and sliced (about 2 c.), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Fry tortillas in hot salad oil, one at a time, just until softened, about 3 min. each side. Heat enchilada sauce; dip tortillas in sauce. Spoon 1-2 t. cheese sauce on each tortilla; sprinkle with about 2 t. tomato and 2 t. onion; roll up. Place seam side down, in greased 12 x 7 1/2 x 2 in. baking dish. Combine remaining cheese sauce an enchilada sauce; pour over casserole.
Bake in moderate (350Β°) oven for 25 min.
