Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 lb. ground turkey or ground chuck, 1 can enchilada sauce, 1 can cream of mushroom soup, about 4 oz. baked tortilla chips and 1 1/2 c. grated sharp cracker barrel cheese (reduced fat), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown turkey or beef and drain.
Add enchilada sauce, soup, chilies and mix.
Layer tortilla chips, meat mixture and cheese in a 13 x 9 inch baking dish.
