Mediterranean Vegetable Casserole
Mediterranean Vegetable Casserole is an impressive Greek dinner you can prepare in about 1 hour 26 minutes. Made with c. olive oil, medium eggplant, sliced 1/4-inch, zucchini, sliced 1/4-inch, green peppers, sliced and large onions, sliced, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Pour oil in pan (13 x 9-inch or larger).
Layer vegetables in following order until all used: eggplant, zucchini, onions, peppers, tomatoes and ending with eggplant; seasoning each layer with salt, pepper and oregano.
Top with sliced, cooked sausages. Pour sauce over all.
Bake, covered at 350Β° for one hour.
Drain off some of the juices.
Top with cheeses and return to oven until melted.
Delicious, simple and serves the whole family plus a couple of friends.
