Low-Fat "Refried Beans"
Low-Fat "Refried Beans" is an moderately easy healthy dish you can prepare in about 1 hour 14 minutes. Made with pinto beans, jalapeno peppers, medium onion, garlic and . oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Finely chop the onion and peppers and mince the garlic.
Saute in 1 tablespoon oil in a Dutch oven.
Drain the pinto beans, reserving the fluid.
Add beans to onion, pepper and garlic and simmer for about 1 hour.
Mash beans.
If beans are dry, add reserved fluid.
Use mixture for burritos, nachos, etc.
