Lo-Fat Muffins

Made with 4 c. grated carrots (spooned, not packed, into cups), 2 c. sugar or 3 or 4 pkg. artificial sweetener or part of each, 1 can crushed pineapple, drained, 1 c. prune purée (recipe follows) and 4 large egg whites, this recipe delivers authentic, satisfying flavors.
