Lentil Soup with Frankfurters
Lentil Soup With Frankfurters is an moderately easy dinner. Made with 2 large onions, 1 stalk celery, diced, 1 leek, sliced, 1 medium potato, peeled and cubed and 3 slices bacon, diced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place onions, celery, leek, potatoes, diced bacon and butter in a heavy kettle.
Saute until soft, but not brown.
Wash and drain lentils.
Add them to potatoes with carrots, sliced franks, salt, catsup and water or chicken broth.
Bring to a boil, lower heat and simmer, covered, for 3 hours or until lentils are soft. Add more water as needed.
Recipe can be prepared in crock-pot or slow cooker according to manufacturer's directions.
Serves 8.
