Lentil Soup
Lentil Soup is an moderately easy dinner. Made with 1 c. lentils, 6 c. water, 2 tsp. butter, 1 clove garlic and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash lentils thoroughly.
Put them in a saucepan with the water; cover and cook over low heat 2 hours or until tender.
Melt butter in a skillet; add garlic and onion; saute 10 minutes.
Put into saucepan with lentils, curry powder, salt, pepper and chicken stock.
Cook over low heat 30 minutes.
Serves 6.
