Lemon Curd Tarts is an easy dinner. Made with 2 c. sugar, 1/4 lb. butter, 6 eggs and juice of 3 lemons, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix butter, sugar, 6 eggs and lemon juice and mix thoroughly in the top of a double boiler.
Cook, stirring constantly, until thick.
It should be the consistency of pudding before you take it off the heat.
May take 10 minutes or so.
Take off the heat and cool.
