Jessie's Chicken and Dumplings
Jessie'S Chicken And Dumplings is an moderately easy dinner. Made with 3 c. flour, 2 1/2 tsp. salt, water, 1 large chicken, cut up and chicken broth, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook chicken until tender in 4 quarts of salted water. Remove chicken from broth.
Cool chicken and remove meat from bones.
Add enough chicken broth to give 5 - 6 quarts of broth. Mix flour and salt together.
Add enough water to make a soft ball of dough.
Roll out dough to about 1/4 inch thick, cut into strips.
Bring broth to a boil, then drop 8 - 10 dumplings into broth stirring them lightly.
As broth comes back to boil, add 8 - 10 more.
Continue until all dumplings are in pot.
Cook at a full boil approximately 5 minutes stirring lightly to keep dumplings separated.
Add cooked chicken meat back to pot.
Boil 2 minutes more.
Remove from heat, cover and wait 20 - 30 minutes before serving.
Sprinkle with black pepper.
