Jelly Roll Coffee Cake
Jelly Roll Coffee Cake is an moderately easy dinner. Made with 1 c. oleo, 1 3/4 c. sugar, 4 eggs, 1 tsp. vanilla and 1 can pie filling (cherry, blueberry or apple), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350Β°.
Cream oleo and sugar.
Add eggs, one at a time, beating well after each addition until light and fluffy. Stir in vanilla and almond extract.
Spread 2/3 of batter in 11 x 15-inch greased baking pan.
Cover with pie filling.
Drop remainder of batter on top in small bits here and there.
While still warm, drizzle with glaze (one 1 cup powdered sugar, 1 to 2 tablespoons milk and flavor with almond extract).
Bake 40 minutes.
