Italian Chicken Pasta
Italian Chicken Pasta is an moderately easy dinner. Made with penne pasta (2 c. uncooked), 1 tsp. chicken bouillon, 1 tbsp. olive oil, 2 cloves garlic, chopped and 1 c. zucchini, sliced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil pasta in 6 cups water with bouillon. Drain and set aside. In skillet, pour 1 tablespoon olive oil and heat.
Saute chopped garlic, zucchini, basil, oregano, salt and pepper for 1 to 2 minutes. Add chicken and cook until chicken is done and zucchini is tender, tossing lightly.
Add tomatoes; reduce heat.
Cook for 15 to 20 minutes.
Serve over pasta.
Garnish with freshly grated Parmesan.
