Hummus
Hummus is an moderately easy dinner. Made with 2 to 3 medium cloves garlic, sliced, 1 large bunch parsley, 2 fresh green onions, in 1-inch pieces, 2 (15 1/2 oz.) cans rinsed and drained or 3 c. cooked chickpeas and 6 tbsp. tahini *, this recipe delivers authentic, satisfying flavors. Place garlic, parsley and onions in a food processor or blender and mince.
Add chickpeas, tahini, lemon juice and salt; puree to a thick paste.
Season to taste.
Transfer to a tightly lidded container and chill.
