Hot Chicken Sandwiches
Hot Chicken Sandwiches is an easy dinner. Made with 1 stewing hen, cooked and salted to taste, 3 c. rich chicken broth, 5 slices broken bread, as for dressing, 5 eggs, well beaten and sandwich buns, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook the stewing hen.
Remove from bone, and cut up fine with kitchen shears.
Place chicken in pot, and add broth.
Bring to a boil.
Stir until bread dissolves into broth.
Turn heat to low, and slowly stir in the well-beaten eggs.
Cook until thickened.
Serve on hot sandwich buns.
