Homemade Tomato Soup
Homemade Tomato Soup is an moderately easy dinner. Made with 14 qt. ripe tomatoes, 1 stalk celery, 14 tbsp. flour, 13 tbsp. butter and 8 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Wash, clean and cut up tomatoes.
Chop onions, celery, parsley and bay leaves.
Add to tomatoes.
Cook until celery is tender. Put through sieve.
Make a thin paste of the flour and butter, using a little of the tomato juice.
Add to boiling soup.
Keep stirring to prevent scorching.
Add salt, sugar and pepper.
If it is lumpy, put through sieve again.
Fill pint jars.
Put on lids tightly.
Hot water bath for 15 minutes.
Makes 10 pints.
