Hawaiian Cheesecake
Hawaiian Cheesecake is an moderately easy dinner. Made with 1/4 c. graham cracker crumbs, 2 tbsp. (2 envelopes) unflavored gelatin, 1/4 c. skim milk, 1/2 c. water and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sprinkle 3 tablespoons graham cracker crumbs on bottom of 9-inch square pan.
Soften gelatin in water.
Drain pineapple tidbits, reserving juice.
Add enough water to make 3/4 cup and bring to boil.
Dissolve gelatin.
In small bowl mix cottage cheese at high speed until smooth, about 3 minutes.
Add egg yolks, milk, lemon juice, Sweet*10, vanilla and salt; beat well.
Blend in dissolved gelatin.
Chill until mixture is thick, but not set. Beat egg whites until soft peaks form; gently fold in gelatin.
