Harira
Harira is a Moroccan tomato, lentil, and chickpea soup fragrant with ginger, cinnamon, cilantro, and lemon. It is hearty enough for Ramadan iftar but bright enough to serve with dates and warm bread.

Soak chickpeas if dried, then simmer them with meat, onion, celery, tomatoes, ginger, cinnamon, and broth.
Add lentils and cook until tender while the soup turns brick red and aromatic.
Whisk flour with water into a thin slurry and stir it in to give harira its silky body.
Finish with cilantro, parsley, lemon juice, and black pepper, then serve hot with dates.
