Grilled Chicken Caesar Salad
Grilled Chicken Caesar Salad is an moderately easy dinner. Made with 2 to 3 boneless chicken breasts, 2 heads romaine lettuce, 2 1/2 c. croutons, 1 small egg beaters or 2 raw eggs and 1 can flat anchovies, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Grill chicken.
Slice cooled chicken into strips and set aside.
Wash lettuce in cold water and dry thoroughly.
Combine anchovies, Egg Beaters, garlic, mustard, oil, lemon juice and Worcestershire sauce in blender (set on "blend").
When mixture is whipped into a froth, toss on salad greens.
Add croutons, cheese and chicken.
When ready to serve, fresh mushrooms and 1/2 cup finely shredded red cabbage may be added for presentation.
