Cut beef into thin strips.
Combine soy sauce, garlic, ginger and beef.
Set aside.
Heat oil in a large frying pan.
Add beef over high heat until brown.
If not tender, cover and simmer 30 to 40 minutes over low heat.
Turn heat up; add vegetables.
Stir until vegetables are crisp, about 10 minutes.
Mix cornstarch with water; add to pan.
Stir until thickened.
Add tomatoes and heat through.
