Green Chili Soufflé
Green Chili Soufflé is an moderately easy soup you can prepare in about 2 hours. Made with (4 oz.) cans chopped green chilies, . grated monterey jack cheese, . grated cheddar or colby cheese, eggs, separated and c. undiluted canned milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 325°.
Grease a 9 x 13-inch baking dish.
Mix cheeses with chilies and set aside.
Beat egg whites until stiff but not dry.
Beat yolks a little.
In small bowl, mix together yolks, milk, flour and salt.
Put cheese and chili mixture into baking dish.
Fork yolk mixture into egg whites.
Pour over cheese and chilies and work in ("fluff") with a fork.
Bake 30 minutes or until knife comes out clean.
Garnish with tomato slices or eat as is.
Serves 8 to 12.
Let sit 5 minutes before cutting.
