Grandma's Potato Soup
Grandma'S Potato Soup is an moderately easy dinner. Made with 6 to 8 medium size potatoes, peeled and coarsely chopped, 1 (10 1/2 oz.) can condensed tomato soup plus 1 can water, 1 (1 lb. 12 oz.) can whole tomatoes in juice, approximately 1 lb. peeled, chunked carrots and approximately 4 large stalks celery with leaves, chunked, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Fry bacon until very crisp.
Remove bacon from large pot. Pour off some of the fat, but reserve a large portion to saute chopped onion.
Add balance of ingredients except reserved bacon. Bring to a boil, then turn way down and simmer 1/2 hour.
Add crushed, crisp bacon and simmer another 45 minutes to 1 hour. Take a potato masher and run it through the soup to break up some of the chunks.
Serve with fresh rye or pumpernickel bread and butter.
Hearty winter meal.
