Gooseberry Jelly(Tart)
Gooseberry Jelly(Tart) is an easy dinner. Made with 4 c. gooseberry fruit juice, 1 pkg. pectin and 5 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large kettle, pour juice; heat.
I add pectin as juice becomes warm.
Bring to rolling boil.
Add sugar.
Stir to dissolve sugar completely.
Continue to stir once in a while. Boil at least 3 minutes or boil until a rolling boil cannot be stirred away.
Remove from heat.
Skim off scum.
Seal in sterile jars or seal with paraffin.
