German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 1/2 to 3/4 lb. bacon, minced, 1/2 c. vinegar, 1/2 c. water, salt and pepper and onion, diced fine, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry bacon; remove part of drippings.
Thicken drippings with 2 tablespoons flour.
Add vinegar, sugar and water.
Pour over potatoes, onion and hard-cooked egg.
Simmer together a few minutes.
(My family prefers a mild salad, so I use the cheapest vinegar I can find.)
