Fruit Swirl Coffee Cake
Fruit Swirl Coffee Cake is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/2 c. butter, softened, 1 1/2 tsp. baking powder, 1/2 c. shortening and 1 (21 oz.) can cherry pie filling (i use 2 cans), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
Grease jellyroll pan (15 1/2 x 10 1/2 x 1-inch) or 2 square pans, 9 x 9 x 2.
Blend sugar, butter, shortening, baking powder, vanilla, almond extract and eggs in large mixing bowl on low speed, scraping bowl constantly.
Beat 3 minutes on high speed, scraping bowl occasionally.
Stir in flour. Spread 2/3 of batter in pan.
Spread filling over batter.
Swirl rest of batter over top of pie filling.
Bake 45 minutes.
While warm, drizzle with glaze of 1 cup confectioners sugar and 1 to 2 tablespoons milk.
