Frozen Waldorf Salad
Frozen Waldorf Salad is an moderately easy dinner. Made with 1 (8 oz.) can crushed pineapple, 2 eggs, beaten, 1/2 c. sugar, 1/8 tsp. salt and 1/4 c. lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain pineapple, reserving juice.
Add enough water to juice to measure 1/2 cup.
Combine juice with eggs, sugar, salt and lemon juice in medium saucepan; mix well.
Cook over medium heat until thickened, stirring constantly.
Add pineapple, celery, apples and walnuts; toss well.
Fold in whipped cream. Spoon mixture into 8-inch square pan.
Cover and freeze until firm.
