French Onion Soup
French Onion Soup is an moderately easy dinner. Made with 1/4 lb. butter, 6 large yellow onions, sliced thin, 2 tbsp. sugar, 2 tbsp. flour and 7 c. chicken stock, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Melt butter in saucepan. Add 6 sliced onions.
Cover with lid and simmer for about 30 minutes. Add sugar and flour.
Stir and cook a few minutes, then stir in stock, salt (remember the Parmesan is salty) and pepper.
Simmer 30 minutes. Taste now and adjust seasonings. Stir and cook 2 sliced onions in chunk of butter until caramelized.
Once crisp and brown, add to soup for color and taste. Toast bread and place in warm oven to dry out. Fill earthenware bowls with soup.
Place toasted bread on top of soup.
Let sink and soak up soup, then sprinkle with cheese. Broil a few minutes to brown cheese.
(May use casserole dish in lieu of bowls.)
