Beat eggs with sugar and vanilla until light.
Add potatoes and shortening.
Sift together dry ingredients; add alternately with milk to potato mixture, beating well.
Chill dough 3 hours. Fry in deep hot fat (375Β°) for about 3 minutes, or until brown, turning once.
Drain.
Dip in sugar.
Makes 2 to 2 1/2 dozen.
