Finnish Coffee Bread
Finnish Coffee Bread is an moderately easy dinner. Made with 2 c. milk, scalded (105~ to 115~), 1/2 c. granulated sugar, 1/2 c. butter, margarine or crisco, 1 tsp. salt and 3 eggs, well beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine scalded milk, sugar and butter in a large bowl; cool to lukewarm.
Add salt, eggs, cardamom, yeast dissolved in water and 5 cups flour.
Stir well.
Add more flour in 1/2 cup increments until dough forms a ball.
Turn out onto floured board. Knead well, adding additional flour as necessary, until dough is dull, elastic and not sticky (approximately 10 minutes).
Coat a large heat-resistant bowl with vegetable oil.
Place kneaded dough in bowl and turn to coat with oil.
Cover with a clean damp dishtowel (not terrycloth) or plastic wrap.
